Hi,

Is it possible to receive 720p or better quality video signal through
component cables?
Or do we necessarily need to use DVI/HDMI for that?
If yes, are there any DVD players which upconvert and deliver this
signal through component video output?

Yes, any resolution is available through component cables. However,
the DVD MPEG-2 standard only encodes 480 lines. Many DVD players on
the market will output 480p signals. They are marketed as "progressive
scan" players. Some will output higher resolution through digital
enhancement of the image, but they don't actually add any more
information.

Technically, yes. Legally/politically, often no.

In practice, yes, for most sources anyway.

Only old ones (or some HTPCs.) New ones pretty much only upconvert
for output via DVI/HDMI with HDCP.

DVD player Samsung DVD HD850 will output 480i, 480p, 720p, and 1080i.
(There's a documented hack that'll output 1080i via component outputs.)
It's got hdmi out,, component out and probably more. I only use hdmi and
component,
although I'm considering getting a component to computer outputs cable for
it.
6' excellent quality custom made cable from ram electronics is only about
$35.00 delivered.
That'll free up a component input on my 43" Pioneer plasma display.

I failed to mention it's debatable how effective deinterlacing and scaling
is at the component level
if the display has a good deinterlacing technology and a good scaler.
